Egg cannelloni

Ingredients

  • 500g spinach leaves
  • 50g Parmesan shavings
  • 50g grilled bell pepper
  • 50g sun-dried tomatoes
  • 1 l Cocovite scrambled egg mix
  • 10 cl milk or cream
  • tomato sauce
  • salt and pepper

Method

Sweat the spinach and drain it. Cut the bell pepper and tomatoes into strips. Pour 150 g of Cocovite scrambled egg mix into a frying pan and fry an omelette on one side. Remove from the pan and cover with spinach, tomato, pepper and Parmesan. Season with salt and pepper. Roll the omelette up and bake in the oven for 3 minutes at 180°C. Repeat until all the ingredients have been used up. Put the cannelloni in an oven dish and pour over the tomato sauce. Heat through and if desired sprinkle with grated cheese and brown under the grill.
