This heat-stable egg yolk products helps give mayonnaise, and béarnaise and tartar sauces and dressings the right texture, while also ensuring that the sauces can withstand extreme heat during preparation. These sauces can also be heated au bain marie because of the heat-stable egg yolks, without running the risk of the sauce separating.
